Classic Stuffed Peppers
Sweet bell peppers are packed with vitamins and high in antioxidants.

Serves: 4
INGREDIENTS
4 medium sweet bell peppers (colour of your choice)
1 lb of lean ground beef, cooked
1/2 medium onion, chopped
3-4 garlic cloves, minced
1 cup jasmine rice, cooked
1/2 can of diced tomatoes (no salt added)
1/2 tsp fresh ground sea salt
1/4 tsp fresh ground black pepper
3/4 cup medium cheddar cheese, shredded
PREPARATION
Heat oven at 350°F.
Mix all ingredients in a bowl.
Remove the top of each pepper (from the stem) , discard the seeds and membranes. If needed, cut a thin slice at the bottom of each pepper (if they cannot stand up straight).
Fill each pepper with beef mixture.
Place peppers on a baking sheet in upright position and place the tops back on the peppers.
Baked (uncover) for about 15-20 minutes, or until the peppers are tender then, remove tops and sprinkle with cheese.
Broil at 400°F for an additional 8-10 minutes, or until the cheese reaches a golden brown colour.
